Breakfast…it’s what’s for dinner!

I love breakfast for dinner. Breakfast foods are so comforting, and delicious. One of my favorite things to make when I'm craving breakfast is this egg casserole. I know there are lots of versions of this on the internet but this one is E-A-S-Y to make. Plus it's cheap. The hubby always smiles when this comes out of the oven. Enjoy!

 


 

What you'll need:
8-10 extra large eggs
1 small yellow onion (about a cup)
1 small bell pepper (about a cup)
½ package Jimmy Dean Precooked Sausage Crumbles*
½ package of Oscar Myer bacon pieces  
2 cups of Colby Monterey Jack cheese (or Cheddar)
Salt and Pepper to taste
9x18 casserole dish
Salsa (for serving optional)

Putting it together:
In a large bowl whisk eggs until well beaten
Combine onion, bell pepper, sausage, bacon pieces, and half the cheese into bowl; mix well
Pour mixture into a 9x18 casserole dish prepared with non-stick cooking spray (as always I lined my dish with aluminum foil for easy clean up)
Cover with remaining cheese
Bake at 350⁰ for 30 minutes or until cheese is bubbly and brown

*if your store doesn’t carry Sausage Crumbles buy the patties (package of 8) and dice them before mixing them in*

I hope you enjoy this dish as much as the Hubby and I do.  It’s simple and delicious.

Taco Casserole


Taco Casserole

Have you ever followed a recipe to the letter only to have the dish turn out to be B-L-A-N-D! That happened to me the first time I made this taco casserole.  The next couple times I made it was better, but tonight I nailed it.  It was so good that the hubby’s eyes rolled back in his head so far he could see the back of his head.  Well okay maybe that’s a small exaggeration but it’s not completely out of the question.   As you know I don’t consider myself a gourmet, I cook food for real people. 

 
 

Recipe

What you’ll need:

1 pound ground beef

1 cup yellow onion (diced)

1 green bell pepper (diced)

1 clove garlic (or 1 teaspoon garlic powder)

1 can ranch style beans

1 can of cream of chicken soup

1 can of Rotel

1 can of chili peppers (I only recommend this if you like things really spicey)

1 bag of tortilla chips

Taco seasoning

1 tablespoon butter

2 cups of shredded sharp cheddar

 

Sour cream for garnish

Salsa for garnish

Jalapenos for garnish  (again I only recommend for hard core pepper bellies)

9x18 casserole dish

Putting it all together:

Preheat oven to 350⁰

Heat a large skillet on medium high heat combine tablespoon butter, onion, bell pepper, garlic and cook until vegetables are soft.

Combine ground beef and brown on medium high heat (the slower you cook the meat the more of the taste it will retain) When meat is mostly cooked through stir in taco seasoning coating the beef

Once beef is browned add the cans of soup, Rotel, and beans, lower heat to medium

In a casserole dish (I lined mine with foil) prepared with non-stick cooking spray crush enough chips to cover the bottom forming a “crust”

On top of the chips pour half of the meat mixture from the skillet

Next layer half the cheddar on top of the mixture

Repeat the layering process: chips, second half of meat mixture, cheddar

Bake in oven 350⁰ for thirty minutes or until bubbly and brown

Holiday Craze



Whew! The Holiday Doe-See-Doe Is Finally Over…


I've got to say the holidays so B-U-S-Y, this year that almost every night I fell asleep the minute my head hit the pillow.  The decorating, shopping, wrapping, cooking, cleaning, partying, and traveling were almost more than this old girl could take.  There were a couple times I was pretty sure I might hyperventilate from all the excitement.  Now that the new year has started and we are home from visiting family, and vacation, things are slowing down and we are settling back into our daily routine.  I love our little routine; it’s what makes me comfortable in our little home.  I hope your holidays were as wonderful as ours and that his new year brings wonderful blessings and surprises to y’all no matter how busy life gets.

Lost in Cyber Space


Lost in Cyber Space

I’ve been having some blogger issues.  I made a few (or maybe a couple) posts but they seem to be lost in cyber space.  I keep having flashes of that old sci-fi show from the 60’s Lost in Space. If you never seen the reruns or the movie (1998) then basically the title explains it all it’s about a family the Robinsons who goes into space and then well, gets lost. They spend time traveling around exploring planets and meeting aliens while they attempt to find their way home to planet earth. There is also a robot on the show B9 who carries the shows catch phrase “Danger! Will Robinson! Danger!” (see video clip below). Anyway back to what I was originally saying; I’ve lost some of my work.  I’ll put them back up later, but for now I guess they will just remain lost in cyber space.

                                                                                                       

With Christmas coming (15 days) I’m excited to start making treats for family and friends.  I love to give food as a gift.  Usually I buy it because well until I became a full time homemaker I didn’t have time or the energy to try to make anything special.  Now I realize I was so wrong about the amount of time it takes to make something wonderful for the people in your life.  This year I am making roasted pecans and I hope they will be a hit with everyone.  Later this week I’ll put up a post showing you how to make this easy treat that sure to impress all your friends and family. 

Once I stop crying over the fact that I didn't back up my work, I'll be back!

 Divine Chicken Enchiladas

So the hubby and I both love MEXICAN food! Really who doesn’t? So when I found a recipe for Chicken Enchiladas I was excited. The first time I made them I was a little disappointed. They were good, better than good actually, but I kept thinking something was missing. Then a couple months ago when the hubby and I were on vacation in Cancun (I’m already planning a return trip) I noticed how the food there was always seasoned. All of the authentic dishes chicken, beef and seafood were always seasoned. That what was missing from my Chicken Enchiladas, flavor. So when I made the dish last night I added some different seasonings in to the chicken as I was cooking it. Turns out that it made all the difference, I hope you like them as much as we do.





Recipe

What you’ll need:
 
9x 13 casserole dish
8-10 flour tortillas
1 package shredded cheese (I used Colby Monterrey Jack)
2-3 chicken breast
3 tablespoons flour
3 tablespoons butter
1 clove garlic minced (or 1 tablespoon garlic powder)
1 cup sour cream
3 cups chicken broth
1 small onion (about a cup)
1 small bell pepper (about a cup)
1can diced green chilies
Extra Virgin Olive Oil (EVOO)

Putting it all together:


Filling:
Preheat oven to 350 Prepare chicken and shred, set aside
Coat bottom of a large skillet with EVOO, warm over medium heat. Place diced onion, bell pepper, and garlic in warm skillet cooking for about 3 minutes or until onions start to become tender, turn heat down to low cook for another 3 to 5 minutes.Add chicken to the skillet and allow to warm, stir occasionally.It’s time to build the enchiladas!I lined my dish with aluminum foil and sprayed with non-stick cooking spray. This dish can get a little messy and the foil will make for easier clean-up later. If you don’t use the foil I do highly recommend at least the spray.

In the middle of a large flour tortilla place chicken and cheese, roll and put into your
casserole dish. I was able to get eight enchiladas in my dish, but depending on how much you stuff in them the amount will vary.

Sauce:
In a sauce pan melt three tablespoons butter
Once butter is melted, add three cups of chicken broth, and 3 tablespoons of flour, whisk until well blended and mixture thickens. Add sour cream, and chilies (I only used a half a can so it wouldn’t be tooS-P-I-C-E-Y) continue to whisk mixture do not bring to a boil, the sour cream will curdle. Pour over the top of the enchiladas, sprinkle with cheese.

Place in oven at 350 for 20-30 minutes.
You can also make bean and cheese enchiladas with this recipe. To do this just open a can of refried beans and spoon them into the middle of the tortilla then put a good deal of cheese on top of the beans. Roll as usual, cover with the sauce and cheese, bake exactly as directed above. In fact I’ve made both types in a single casserole dish.

Grown Up Sloppy Joe




I know it sounds like an oxymoron, how can something that’s made to be messy be considered grown up?  I guess it’s really just a matter of opinion.  Because this version of the classic dish is a little on the spicy side, I think they are more grown up than the Sloppy Joes I ate as a kid.  My mother made a mean Sloppy Joe, and they were G-O-O-D.  Lately I’ve been thinking about them, and so I looked around for a recipe with a lot of flavor and some kick.  I finally decided to combine two recipes together to create the ultimate Grown Up Sloppy Joe. 
 
 
Recipe
What You’ll Need:
 
1 pound ground beef
2 tablespoons for butter
½ of a large bell pepper
1 small onion or ½ of a large onion
2 cloves of garlic (or a tablespoon of garlic powder)
1 tablespoon of brown sugar
1 teaspoon chili powder (you could use less for a milder taste)
1 teaspoon dry mustard
¼ teaspoon red pepper flakes

2 cups ketchup
2-3 tablespoons Worcestershire Sauce (or to taste)
Tabasco or Hot Sauce (I did not use this but if you’re a Pepper Belly then you might like the extra kick)
Buns
Putting it all Together:
Dice the onion, bell pepper, and garlic set aside
In a large pot or skillet brown the ground beef on medium high heat adding in the diced vegetables about halfway through. Continue cooking until meat is browned and vegetables are soft.  
Once the ground beef if done, add in the ketchup, brown sugar, chili powder, red pepper flakes, dry mustard, Worcestershire sauce, and salt and pepper to taste.  Stir until well combined and then allow to simmer for 15 minutes.  Stir occasionally.
Serve on bread or buns of your choice.

Fun in the Sun!
