Easy Enchilada Pie


I love Mexican(ish) food! This was a really easy, yummy weeknight dinner.  One of the things I liked best about it was that it called for a pound of ground beef which made it thrifty and tasty. 

Recipe

What You’ll Need:
1 lb. lean ground beef
1 cup onion
½ cup bell pepper
1 can condensed (undiluted) cream of chicken soup
1½ cups of Velveeta (½ inch cubes)
1 can Rotel (choose mild if you don’t want it to be too spicy)
6 corn tortillas (6 inch) cut in half
8 inch square baking dish

Putting it together:

Preheat oven to 350⁰
Brown ground beef, onions, and bell peppers in a large skillet on medium high heat. Once the beef is browned add a can of undiluted cream of chicken soup, and ½ cup of the cubed cheese.  Continue to heat until all the cheese is melted and the mixture is well blended.

On the bottom of the baking dish put a thin layer of the beef mixture. Then layer half of the tortillas on top.  Next layer a third of the beef mixture on top of the tortillas followed by a ½ cup of the cubed cheese, then half of the can of Rotel.  Repeat.  See pictures below for examples:
This is the first layer, before I put on the Rotel.
  I cut the cheese into smaller pieces to make sure the cheese melted
 into every bite. I wrapped my baking dish in foil and sprayed it with
cooking spray. I reccomend you do this too, trust me you'll thank me later.

This is what my dish looked like before I put it in the oven  When I took it out
it was a dish of yummy cheesey goodness.
